1 -26 oz. jar basil tomato sauce
1 -10 oz. pkg. fresh spinach (cleaned and de-steamed)
4 -slices bacon, chopped
1 -small onion shopped
3-cloves garlic chopped/minced
1 -16 oz. can white beans (like white kidney)
1 -16 oz pkg. Orecchietta or shell pasta, cooked and drained
In a large skillet cook chopped bacon until crisp, use the fat to then sauté your onion garlic until tender. Add beans, heat through. Return bacon to pan, add spinach. Stir everything together, cook spinach until wilted. Add pasta and sauce, stir together making sure everything is coated with sauce. Heat through and serve.
I served with a little splash of extra virgin olive oil and fresh grated Parmesan Cheese, with a simple Caesar Salad and great crusty Italian peasant bread!
